You suggested the use of plain-woven linen for the course, and offered many reasons for doing so, but I was wondering whether the linen should be treated or softened in any way. You see, I have several meters of natural linen, which some would call rustic, but I also have some fabric made of a linen-cotton blend. The latter is softer, smoother and does not appear to wrinkle as easily. They are both of a similar weight, and with visible grain, but (as expected) drape differently.
I should also mention that whilst I do have wool canvas, it may not be heavy enough to support the fabric.
Could either of the linen options above, serve as body canvas instead? And can the other potentially serve as the main fabric of our jacket?

Usually your fabric does not have to be softened. Unless it's not meant to be a garment fabric. This is a difficult question to answer as I have no idea how your fabric looks.
You can generally speaking use linen fabric as your body canvas if you wish. Linen - Cotton blends are great fabrics. You can use them as your show fabric and perhaps the rustic linen as your canvas substitute.
